Soft and Chewy Oatmeal Cookies
No matter what diet you follow, increasing plant based foods is a great way to reduce the grocery bill and also reduce the load on the ๐ These super easy cookies are protein packed making a filling and satisfying, snack for brekky on the go or yummy lunchbox filler ๐

INGREDIENTS 1 banana 1 flaxseed/chia egg (Soak 1/2 TBS flaxseed meal (ground raw flaxseed) and 1/2 TBS chia seeds in 3 TBS pure water) OR use one egg 1 cup Rolled Oats 1 cup dried unsweetened Coconut (desiccated) 1 TBS coconut flour 1 heaped TBS Nutra Organics vanilla clean protein 1 tsp baking powder 1 tsp cinnamon (or 3 drops doTERRA essential oil) 3 drops DoTERRA Wild Orange essential oil METHOD ๐ช Preheat oven to 180ยฐC ๐ช Blend banana and flax egg on high till smooth. ๐ช Add protein powder, baking powder and essential oils if using. ๐ช Pulse through oats, desiccated coconut and coconut flour. ๐ช Spoon mixture onto lined tray and press till 1 cm thick with a fork. ๐ช Bake for 10-15 mins. I often make a big batch on a Sunday to get our family through the first couple of days of the week - you can mix up the flavour by adding some dark chocolate or blueberries or seeds of choice ๐
