Chocolate Muffins Revitalized


With a birthday looming, the request from the nearly 4 year old for chocolate cake was strong. I have to admit I've got a bit carried away in the past healthifing (is that a word😕) the kids birthday treats. This chocolate cake turned muffins for ease strikes a good balance between delicious moist chocolatey goodness with a healthy dose of protein and good fats. One of these fills ya for a good 4 or so hours - I kid you not!


Cake/Muffin

Ingredients 2 cups blanched almond flour 1 cup tapioca flour ¼ cup coconut flour ¾ cup raw cacao powder ½ cup raw coconut sugar 2 tsp baking powder 1 tsp salt ½ cup coconut oil, melted 1 cup coconut milk, full fat 3 large eggs, room temperature 1 heaped TBS Nutra Organics vanilla clean protein (or 1 tsp pure vanilla powder) Instructions Preheat oven at 180°C Grease a 6 muffin hole tin or 20cm cake tin with coconut oil. In a large bowl mix together the almond flour, coconut flour, raw cacao powder, vanilla protein powder, coconut sugar, baking powder and salt. In a separate bowl whisk together the coconut oil, coconut milk and eggs. Using a spatula, gently mix dry ingredients into wet ingredients to form a batter. Do not over mix. Pour batter into prepared tin and bake until a toothpick inserted into the center comes out clean, approximately 45-50 minutes for cake (25-30 for muffins) If you feel you need to cook it longer, cover l with aluminum foil to prevent burning the top and lower the heat to 160°C. Cook until toothpick comes out clean. Set aside to cool completely. Avocado Chocolate Icing

Ingredients 1 perfectly ripe avocado 1/2 cup raw cacao powder 1/4 cup 100% maple syrup 1 tsp cinnamon 1 heaped TBS Nutra Organics collagen powder (makes icing so fluffy and light) 1/4 cup melted 9 squares Green and Blacks 85% organic dark chocolate Instructions Place all avocado, raw cacao, collagen, cinnamon and maple syrup, in a blender and mix till smooth. Put blender on slow and slowly pour in melted chocolate. The icing is ready to spread immediately but you can refrigerate for 5mins if you think it needs to firm up or want to put through a piping bag. Decorated with Fresh As freeze dried raspberries and strawberries plus a sprinkling of desiccated coconut and grated chocolate 😋
