Celebrating all things ACAI


There are many food trends out there that are unwarranted, but when it comes to Acai bowls — which feature the superfood from Brazil — the buzz is 100 percent deserved.

Acai is an indigenous berry found in the rain forests of the Amazon. It is a low sugar fruit that contains many health-related benefits due to its high vitamin and mineral content. Acai is considered to be one of many beauty foods as it’s rich in antioxidants, minerals, vitamins (Vitamin C for collagen production and free radical damage), and healthy fats (for skin elasticity, moisture retention, and healthy hormone production). Acai berries contain anti-inflammatory benefits, cholesterol lowering benefits, and anti-cancer benefits as with many other fruits and vegetables.

All these health benefits as well as having the flavour that's somewhere between dark chocolate and wild berries. Its a win win here people!!!

I've compiled a list of favourite ways to consume Acai at our house so I'm hoping you'll enjoy too!!

Probiotic Acai bowls 🍨 2TBS Pure Jungle Acai powder 🍨 1 cup frozen mango pieces 🍨 2 TBS chia seeds 🍨 1 cup frozen blueberries 🍨 1/2 cup of Daily Organics winter chai kombucha Defrost frozen fruit slightly - the secret for thick soft serve consistency is minimal liquid and using creamy fruit like bananas or mangos or avocado as a base. Having a high powdered blender helps and definitely worth the investment if you're into soups, smoothies, sauces, nicecreams... So many fast and healthy options!

Blend all ingredients till smooth (nicecream consistency) Topped with mango and kiwifruit cutouts and lime (x factor taste and a great tonsillitis preventative measure!)


Pancake party with Acai Sauce

(Serves 2) Ingredients 2 large bananas 3 large eggs 1/2 cup almond meal OR 1/2cup brown rice flour and 2TBS coconut flour 1TBS LSC (linseed, sunflower and chia) 1 heaped TBS Nutraorganics vanilla clean protein 1TBS cinnamon 1tsp baking soda 1tsp apple cider vinegar Coconut oil or butter for frying Method 🍌 Put bananas and eggs and apple cider vinegar in the blender and process till smooth

🍌 Add the almond meal OR 1/2cup brown rice flour and 2TBS coconut flour, Plus LSC, cinnamon, Nutraorganics vanilla clean protein and baking soda

🍌 Pulse until a smooth batter forms (This is a thicker mixture than your standard pancake mix)

🍌 Heat a large frying pan over a medium heat.

🍌 Add 2 tsp of coconut oil or butter to the pan and melt

🍌 Drop large spoonfuls of batter onto the hot frying pan.

🍌 Cook for 2 minutes, flip the #pancakes over and cook for a further 1 minutes. And now for the superfood toppings Melt 1 TBS coconut oil and mix with 1tsp Pure Jungle Acai powder - drizzle all over pancakes. Sprinkle over gogi berries, cacao nibs, desiccated coconut, blueberries and pistachios


Channeling the Tropics Acai Bowl 🌺 2 TBS Pure Jungle Acai powder 🌺 1 cup organic frozen mixed berries 🌺 2 frozen ripe bananas 🌺 1/4 avocado (optional) but gives extra creamy factor 🌺 A splosh of coconut milk Blend until smooth and creamy!

We have a few passionfruit in the garden at the mo and I have to say this takes the flavour to a whole new level! So add on top if you have or top with your favourites! 👌


Layered Acai Jar

🌸 Thinly slice a kiwifruit and cut stars out, take 2 of the pieces and stick to the inside of your very dry jar (fruit only sticks if its cut thinly and the jar is ultra dry).

🌸 In a blender add 1 cup frozen banana pieces, 1 cup frozen strawberry pieces, 1/4 cup coconut milk and 1 TBS chia seeds. Blend till nicecream and spoon 1/2 into a bowl 🌸 Add to the mix in the blender 1 heaped TBS Pure Jungle Acai Powder. Blend till its mixed through. 🌸 Spoon 1/2 onto a jar 🌸 Add mix from the bowl on top. 🌸 And finally the last acai layer from the blender 🌸 Top with your fav (ideally edible) #flowers - may have to compromise if kids are responsible for picking


Collagen Acai bowl

🌺 2 TBS Pure Jungle Acai powder 🌺 1 TBS Nutraorganics collagen body 🌺 1 cup organic frozen blueberries 🌺 1 frozen ripe banana 🌺 1/4 avocado (optional) but gives extra creamy factor 🌺 a splosh of coconut milk METHOD ~ defrost frozen fruit slightly - the secret for thick soft serve consistency is minimal liquid and using creamy fruit like bananas or mangos or avocado as a base Blend until smooth and creamy like 🍦! Have fun with your toppings! This one is simple a few lines of coconut yoghurt swirled on top, kiwifruit stars, bee pollen and the last passionfruit found on the vine and I have to say this takes the flavour to a whole new level! So add on top if you have or top with your favourites! 👌


Sinking Stars Acai jar 🌟 Mix 2TBS of chia seeds with 3/4 cup pure harvest coconut milk 🌟 Leave to soak for 30mins (or overnight) 🌟 Stir through 3 TBS coconut yoghurt before layering In a blender add 🌟 The flesh of 1 frozen mango 🌟 1/2 cup frozen mixed berries 🌟 1 heaped TBS Pure Jungle Acai powder Blend till smooth I cut stars out of mango and dragonfruit. Make sure your jar is really dry and stick to the inside. 🌟 Add acai blend to the base 🌟 Mix 1/2 acai and 1/2 chia mix together and then add to jar 🌟 Finish with chia mix
