Soft and Chewy Oatmeal Cookies

No matter what diet you follow, increasing plant based foods is a great way to reduce the grocery bill and also reduce the load on the 🌎
 
These super easy cookies are protein packed making a filling and satisfying, snack for brekky on the go or yummy lunchbox filler 😋

INGREDIENTS
 

 
1 banana
 

 
1 flaxseed/chia egg (Soak 1/2 TBS flaxseed meal (ground raw flaxseed) and 1/2 TBS chia seeds in 3 TBS pure water) OR use one egg
 

 
1 cup Rolled Oats
 

 
1 cup dried unsweetened Coconut (desiccated)
 

 
1 TBS coconut flour
 

 
1 heaped TBS Nutra Organics vanilla clean protein
 

 
1 tsp baking powder
 

 
1 tsp cinnamon (or 3 drops doTERRA essential oil)
 

 
3 drops DoTERRA Wild Orange essential oil
 

 
METHOD
 

 
🍪 Preheat oven to 180°C
 

 
🍪 Blend banana and flax egg on high till smooth.
 

 
🍪 Add protein powder, baking powder and essential oils if using.
 

 
🍪 Pulse through oats, desiccated coconut and coconut flour.
 

 
🍪 Spoon mixture onto lined tray and press till 1 cm thick with a fork.
 

 
🍪 Bake for 10-15 mins.
 

 

 
I often make a big batch on a Sunday to get our family through the first couple of days of the week - you can mix up the flavour by adding some dark chocolate or blueberries or seeds of choice 😋
