Crikey Crickets

I can see my darling husbands dropped face at the door if he reads this blog at work. “We’ve been eating WHAT in our pancakes the last month?” “This is just like that time with magic mince...” (trying to incorporate organ pieces in a discrete way into the diet was not a success; but I have to say the kids never complained).

However, in terms of the pancake morning’s everyone has been enjoying on a regular bases this month (often why we are running late to school) the incorporation of cricket flour into the mix has made a breakfast of deliciousness into one that also really goes the distance.

Have a few of these bad boys and you’ll be well and truly satisfied till lunch time.

A Spring in your Step Pikelets/Pancakes (depending on how big you make them)


2 ripe bananas

2 eggs

2 TBP ground flaxseed or LSC (linseed, sunflower and chia)

1 tsp vanilla powder

2 tsp cinnamon

2 TBP cricket flour

½ tsp gluten free baking powder

1 cup almond meal


  1. Put bananas, eggs, ground flaxseed or LSC, vanilla powder, cinnamon, baking powder and cricket flour in a blender and blend till smooth

  2. If your blender is high power you can add almond meal and pulse through. You are looking for a thick batter consistency. If you don’t think your blender is high power put the almond meal into a bowl and pour the smoothie like ingredients into it stirring until you have a thick batter

  3. Melt ghee in a frying pan. Once melted leave on a low heat and place dollops of batter into the frying pan. You may have to spread out with the back of a spoon.

  4. Continue to cook on other side. Repeat with remaining pancake batter.

  5. Serve warm with your choice of toppings. The favourite's at our house is Almond, Brazil Cashew butter, Organic mixed berries or Organic butter
